***ALL MEAT IS PROCESSED FROM FRESHLY SLAUGHTERED ANIMALS OR POULTRY. AT PROCESSING, IT IS IN PEAK CONDITION AND FRESHNESS. THE MEAT IS PRESERVED BY RAPID FREEZING TO COLDER THAN - 18 DEGREES CENTIGRADE. IT IS THEN STORED AND DISTRIBUTED IN THIS FROZEN FORM. FREEZING STOPS BACTERIAL GROWTH AND DETERIORATION OF THE MEAT IS ALSO SLOWED DOWN. FREEZING MEAT CAN PRESERVE ITS WHOLESOMENESS AND QUALITY FOR 6 MONTHS TO A YEAR DEPENDING ON THE TYPE OF MEAT. UPON THAWING, MEAT QUALITY SHOULD BE AS ACCEPTABLE AS THE FRESH PRODUCT***
We process one cow, two to three lambs or goats and approximately 30 chickens at a time and do not sell beef, lamb, or goat whole, by the half or by the quarter. Our chicken is normally only available in the Fall. All of our meats are sold by the cut and the meat is rotated using FIFO (First In - First Out) procedures to keep the best meat available for our customers. Since we sell what we raise and carry limited amounts of meat, we encourage you to email or call for the availability of particular cuts before coming to the Farm Store.
